Kymber Stephenson is a Registered Dietitian Nutritionist, educator, Clinical Supervisor, and speaker specializing in inclusive eating disorder management and prevention. As the Clinical Director of Side by Side Nutrition—the largest group practice of dietitians in Colorado—Kymber leads a team of compassionate experts who support clients across the lifespan in reconnecting with food, body, and self. Her approach is grounded Health at Every Size®, trauma-informed care, compassionate body image work, and client autonomy.

With over seven years of experience working across all levels of eating disorder care and with individuals of all ages, Kymber brings clinical depth, warmth, and a systems-oriented mindset to her work. Her expertise is further shaped by mentorship and training with renowned leaders in the field including Marci Evans, Fiona Sutherland, Lisa Pearl, Whitney Trotter, and Beth Harrell

 

Kymber’s journey began with a love of food and a degree in Culinary Arts from Johnson & Wales University, followed by a Bachelor of Science in Culinary Nutrition with dual concentrations in Clinical Dietetics and Culinary Food Science. Her educational path also includes community leadership training and mentorship in Six Sigma systems thinking, which now informs her big-picture approach to collaborative care and program development.

Kymber wears many hats in the dietetics and eating disorder communities. Outside of Side by Side, she is a case consultant with EDRDpro, guest lecturer at Colorado State University and Metropolitan State University of Denver, and serves as both a Dietetic Internship Preceptor and the Preceptor Coordinator for CSU’s Coordinated Masters Program in Nutrition & Dietetics. She also provides regulatory consulting for menu labeling and food service operations at a Denver-based children’s group home. Kymber is also currently facilitating a project to bring passionately invested people together in advocating for safer Higher Level of Care centers to all who need them.

In her national leadership roles, Kymber serves on the Board of ACEND’s Weight Inclusive Toolkit Initiative and contributes to the committee designing the first official weight-inclusive curriculum for all future dietetic professionals. She leads the working group responsible for creating The Expanded RDN Skill Set, a lecture dedicated to enhancing eating disorder assessment and referral processes within dietetics. 

Throughout her career, Kymber has built a diverse portfolio—from culinary roles at Disney and l recipe development for Compass Group, to clinical nutrition in pediatrics at Children’s Hospital Colorado, where she gained experience in oncology, allergy management, maternal-fetal medicine, and beyond. Her passion remains in helping people truly fall in love with food again where possible—not just for its nourishment, but for its tradition, comfort, and joy.

Kymber has been featured on several podcasts, including Embodiment for the Rest of Us and RD Real Talk, where she discusses the intersection of history, healthcare systems, body image, psychology, and culturally competent care. Kymber is a featured SeekHer Foundation scholar who appreciates the importance of community connection amongst helping professionals within and beyond the eating disorder community.

Outside of her professional life, you’ll find Kymber finding fun in her community, blowing bubbles, dancing, cooking with a glass of wine nearby, and taking far too many photos of her cats, plants, and partner. A devoted traveler and lover of the outdoors, she continues to explore the beauty of Colorado and plans to check the last two continents off her travel list soon.
